Hello! I’m Amelia, welcome to Ritzy Recipes. My love for cooking started from a very personal journey when my first child was eight and needed a boost in his nutrition. I spent so much time experimenting with ingredients to make food that was both high-quality and exciting for a young boy to eat. This Bacon Double Smash Burger became a household legend during that time because it is pure, soulful comfort.
Next, you are going to learn how to make a homemade smash burger with bacon that tastes better than any local joint. My kitchen isn’t about perfection—it’s about real food, real life, and real flavor. This recipe delivers a diner style smash burger experience right to your dining room table. Grab a glass of sweet tea, and let’s get those cast-iron skillets hot!
Then, you will discover that the best crispy smash burger recipe is all about the technique. You are about to master the art of the “hard smash” to get those crispy, lacey edges that everyone fights over. Also, we are keeping things simple and delicious, just like a proper double bacon cheeseburger recipe should be.
What You Need for a Cast Iron Smash Burger Recipe
Also, preparing your station is the most important part of short-order cooking. This how to make smash burgers at home guide requires high heat and fast moves, so have everything ready to go.
- High-Fat Ground Beef: You must use 80/20 ground beef. The fat is what creates the steam and the sear.
- Thin-Cut Bacon: Choose a quality thin-cut brand so it crisps up perfectly and stays tucked inside the bun.
- American Cheese: Also, this is the only time I insist on the plastic-wrapped slices because they melt into a beautiful “glue.”
- Brioche Buns: A soft, buttery bun holds up to the juices without falling apart.
- The Tools: You need a heavy cast-iron skillet and a sturdy, flat-bottomed spatula.
Step 1: Prep the Smash Burger Sauce Recipe
Next, start by mixing your signature sauce. Every great diner style smash burger needs a tangy spread to cut through the richness of the meat. Combine mayo, yellow mustard, a dash of pickle juice, and smoked paprika in a small bowl. Then, set it aside in the fridge so the flavors can marry while you cook.
Also, if you are looking for more easy healthy dinner ideas, you can swap the mayo for Greek yogurt, but for a true “Ritzy” treat, we stay classic. This sauce is also fantastic on my crack burgers recipe.
Step 2: Crisp the Bacon to Perfection

Then, place your thin-cut bacon in a cold skillet and turn the heat to medium. This method allows the fat to render out slowly, ensuring every inch is crispy. Next, remove the bacon once it reaches a deep mahogany color and drain it on paper towels. Also, keep that bacon grease in the pan!
Next, we are going to use that flavorful fat to sear our beef. If you love the combination of salt and crunch, you really need to try my sweet bacon crackers next time you host a party.
Step 3: The Hard Smash Technique
Also, turn your heat up to high until the skillet is lightly smoking. Place two loosely packed balls of beef into the pan. Then, immediately use your heavy spatula to press down with all your weight. You want the patty to be paper-thin with “lacey” edges sticking out. This is the secret to a Bacon Double Smash Burger.
Next, season generously with salt and pepper while the bottom sears. Don’t worry, you won’t taste the grease—it all turns into flavor! For another high-heat favorite, check out my garlic butter steak bites.

Step 4: The Double Melt and Assembly
Then, flip the patties after about two minutes once the edges are dark brown. Next, immediately place a slice of American cheese on each patty. Also, stack one patty on top of the other so the cheese melts into a gooey center. This is what makes it a true double bacon cheeseburger recipe.
Next, toast your brioche buns in the leftover pan juices. Spread your prepared smash burger sauce recipe on the bottom bun, add pickles, and pile on that crispy bacon. If you enjoy one-pan wonders like this, you will love my stovetop creamy ground beef pasta.
FAQs
Next, it’s all about the heat and the fat. Use a cast-iron pan and 80/20 beef. The contact between the cold meat and the screaming hot pan creates that savory crust we love.
Then, you must do your smashing in the first 30 seconds. If you press down later, you are just squeezing out the juices that make the burger moist. Nobody wants a dry, sad burger!
Also, stick with thin-cut. It bites through easily so the whole burger stays together in your hand. For more bacon-heavy favorites, try my bacon crackers recipe.
Next, you don’t! A flat spatula works just fine. If it isn’t heavy enough, use a wooden spoon to press down on top of the spatula for extra leverage.
