Description
A refreshing, crisp summer side dish made with sliced English cucumbers, sweet red onions, and a tangy apple cider vinegar dill dressing.
Ingredients
4 large English cucumbers sliced
1/2 cup sweet red onion sliced thin
2 tablespoons apple cider vinegar
1 tablespoon fresh dill chopped
1 pinch sea salt to taste
Instructions
1. Slice the cucumbers into even rounds and place them in a colander.
2. Sprinkle with sea salt and let sit for 20 minutes to drain excess water.
3. Pat the cucumber slices completely dry with a clean kitchen towel.
4. Toss the dried slices with red onions, vinegar, and fresh dill in a large bowl.
5. Chill in the refrigerator for 30 minutes before serving.
Notes
Keep the skins on English or Persian cucumbers for extra crunch. Serve immediately after chilling for the best texture.
