Ingredients

  • 1 cup cornbread mix (like Jiffy works great!)
  • 1/2 cup buttermilk (or milk + lemon juice)
  • 1 large egg
  • 1/4 cup shredded cheddar cheese (optional)
  • 1/4 cup cooked and crumbled bacon (optional)
  • 1/4 cup honey
  • 2 tablespoons unsalted butter
  • 1 tablespoon maple syrup (optional)
  • Pinch of salt


Instructions

  1. In a medium bowl, mix the cornbread mix, buttermilk, and egg just until combined.
  2. Fold in shredded cheese and bacon if using.
  3. Preheat mini waffle maker and grease lightly.
  4. Scoop about 1 tablespoon of batter into each waffle slot and cook for 3–4 minutes until golden brown.
  5. Remove and place on cooling rack. Repeat until batter is used up.
  6. In a small saucepan over low heat, melt butter, then stir in honey, maple syrup (if using), and salt until smooth.

Notes

Let waffles cool on a rack to stay crisp. Use milk + lemon juice as a quick buttermilk substitute. For fluffier bites, whip egg white separately before folding in. Spice up with cayenne or chiles for a savory twist.
