- 1 cup cornbread mix (like Jiffy works great!)
- 1/2 cup buttermilk (or milk + lemon juice)
- 1 large egg
- 1/4 cup shredded cheddar cheese (optional)
- 1/4 cup cooked and crumbled bacon (optional)
- 1/4 cup honey
- 2 tablespoons unsalted butter
- 1 tablespoon maple syrup (optional)
- Pinch of salt
Instructions
- In a medium bowl, mix the cornbread mix, buttermilk, and egg just until combined.
- Fold in shredded cheese and bacon if using.
- Preheat mini waffle maker and grease lightly.
- Scoop about 1 tablespoon of batter into each waffle slot and cook for 3–4 minutes until golden brown.
- Remove and place on cooling rack. Repeat until batter is used up.
- In a small saucepan over low heat, melt butter, then stir in honey, maple syrup (if using), and salt until smooth.
Notes
Let waffles cool on a rack to stay crisp. Use milk + lemon juice as a quick buttermilk substitute. For fluffier bites, whip egg white separately before folding in. Spice up with cayenne or chiles for a savory twist.
