A cool and refreshing Creamy Cucumber Salad made with crisp cucumbers, tangy sour cream dressing, and fresh dill. The perfect make-ahead summer side dish.
Ingredients

- 2 English cucumbers, peeled and thinly sliced
- ½ cup sour cream (or Greek yogurt)
- 1 tablespoon fresh dill (or 1 teaspoon dried dill)
- 2 tablespoons white vinegar
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- 1 teaspoon sugar
- ½ red onion, thinly sliced (optional)
Instructions
- Peel and thinly slice the cucumbers and place them in a large mixing bowl.
- In a small bowl, whisk together sour cream, dill, vinegar, salt, garlic powder, and sugar until smooth.
- Pour the dressing over the cucumbers and add red onion if using.
- Gently toss until the cucumbers are evenly coated.
- Cover and refrigerate for at least 1 hour before serving.
- Serve chilled.
Notes
For a thicker salad, salt cucumbers and let drain for 15 minutes before mixing. This salad tastes even better after chilling.
