Description

A cool and refreshing Creamy Cucumber Salad made with crisp cucumbers, tangy sour cream dressing, and fresh dill. The perfect make-ahead summer side dish.


Ingredients

  • 2 English cucumbers, peeled and thinly sliced
  • ½ cup sour cream (or Greek yogurt)
  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)
  • 2 tablespoons white vinegar
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • 1 teaspoon sugar
  • ½ red onion, thinly sliced (optional)


Instructions

  1. Peel and thinly slice the cucumbers and place them in a large mixing bowl.
  2. In a small bowl, whisk together sour cream, dill, vinegar, salt, garlic powder, and sugar until smooth.
  3. Pour the dressing over the cucumbers and add red onion if using.
  4. Gently toss until the cucumbers are evenly coated.
  5. Cover and refrigerate for at least 1 hour before serving.
  6. Serve chilled.

Notes

For a thicker salad, salt cucumbers and let drain for 15 minutes before mixing. This salad tastes even better after chilling.
