  • 2 large chicken breasts (boneless, skinless)
  • Salt & pepper to taste
  • Flour for dredging
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 12 ounces mushrooms (cremini or white), sliced
  • 1/4 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 cup heavy cream
  • Fresh parsley, for garnish (optional)
  • Freshly grated Parmesan cheese, for garnish (optional)


Instructions

  1. Cut the chicken breasts in half lengthwise to create thinner cutlets. Season with salt, pepper, and garlic powder. Dredge lightly in flour.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, melt butter, then add the mushrooms and Italian seasoning. Cook for 5-7 minutes until golden brown. Remove the mushrooms and set aside with the chicken.
  4. Add garlic to the pan and cook for 30 seconds. Stir in chicken broth, lemon juice, and Dijon mustard. Cook for 3-4 minutes to reduce the broth by half.
  5. Pour in the heavy cream and simmer for 2-3 minutes to thicken the sauce slightly.
  6. Add the chicken and mushrooms back into the pan. Simmer for 5 minutes until the chicken is cooked through and coated in the creamy sauce.
  7. Garnish with parsley and Parmesan cheese, then serve.

Notes

For a lighter version, you can use half-and-half or milk instead of heavy cream. Serve with pasta, rice, or vegetables for a complete meal.
