- 1/2 cup granulated sugar (plus extra for rolling, optional)
- 1/2 cup brown sugar
- 1 cup creamy full-fat peanut butter (not natural)
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, combine all ingredients and beat with an electric mixer on medium speed for 2–3 minutes until smooth and thick.
- Scoop heaping tablespoons of dough and roll into balls. Optional: roll in granulated sugar for extra sparkle.
- Place dough balls on baking sheet about 2 inches apart. Use a fork to press a criss-cross pattern into each ball, dipping fork in sugar between presses if needed.
- Bake for 10 minutes until puffed and light golden. Cookies will be soft—don’t overbake!
- Let cookies cool on tray for 5 minutes before transferring to wire rack to cool completely.
Notes
Use creamy peanut butter like Jif or Skippy—not natural varieties. Add chocolate chips, nuts, or drizzle with chocolate for variations. Freeze dough balls and bake straight from the freezer if needed.
