Description

These Hawaiian Chicken Skewers combine juicy lemon-ginger marinated chicken with charred fresh pineapple and vibrant vegetables. A perfect sweet and savory summer BBQ dish that is healthy and easy to make!


Ingredients

1.5 lbs chicken breast, cubed

1 fresh pineapple, cut into chunks

1 red onion, cut into chunks

2 bell peppers, cut into squares

1/2 cup soy sauce

1/4 cup pineapple juice

2 tbsp honey

1 tsp grated ginger

2 cloves garlic, minced


Instructions

1. Whisk soy sauce, pineapple juice, honey, ginger, and garlic. Reserve 1/4 cup for glazing.

2. Marinate cubed chicken in the remaining sauce for 1-2 hours in the fridge.

3. Thread chicken, pineapple, peppers, and onions onto soaked wooden skewers.

4. Grill over medium-high heat for 10-12 minutes, turning occasionally.

5. Brush with the reserved glaze during the last 2 minutes of grilling.

6. Serve warm over rice or with a fresh salad.

Notes

Soak wooden skewers for 30 minutes to prevent burning. Use fresh pineapple for the best texture on the grill!
