  • 8 oz dried pasta of choice (penne, rigatoni, or fettuccine)
  • 1 Tablespoon olive oil
  • ½ cup onion, finely chopped
  • 34 cloves garlic, minced
  • 1 Tablespoon butter
  • 1 pound chicken breasts, cut into bite-size pieces
  • ½ teaspoon EACH: Italian seasoning, smoked paprika, red pepper flakes, garlic powder, salt, pepper
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, grated
  • ½ cup sun-dried tomatoes, chopped
  • Fresh basil leaves for garnish


Instructions

  1. Boil salted water and cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic. Cook until soft and fragrant.
  3. Add butter to the skillet. Stir in chicken and season with Italian seasoning, smoked paprika, garlic powder, red pepper flakes, salt, and pepper. Cook until the chicken is browned and fully cooked through.
  4. Pour in heavy cream and stir. Add grated Parmesan cheese. Simmer for 2–3 minutes until slightly thickened.
  5. Mix in chopped sun-dried tomatoes. Toss in the cooked pasta and stir to coat evenly with the sauce. Let it cook for another minute to blend flavors.
  6. Top with fresh basil leaves and serve immediately.

Notes

Use freshly grated Parmesan for best results. Don’t skip the sun-dried tomatoes—they add a key depth of flavor. Add more red pepper flakes for extra heat. Substitute with half-and-half for a lighter version. Great with baby spinach or mushrooms added.
