- For the Pumpkin Bread:
- ¼ cup vegetable oil
- ⅓ cup granulated sugar
- ⅓ cup light brown sugar
- 1 cup pure pumpkin puree
- 1 large egg, at room temperature
- 2 teaspoons pure vanilla extract
- 1 ½ cups all-purpose flour
- 2 teaspoons pumpkin pie spice
- ¾ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- For the Cream Cheese Filling:
- 4 oz cream cheese, softened to room temperature
- ¼ cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 1 large egg, at room temperature
Instructions
- Preheat oven to 350°F (180°C). Grease a 9×5 loaf pan and lightly flour it for easy release.
- In a large bowl, whisk together oil, granulated sugar, brown sugar, pumpkin puree, egg, and vanilla extract until smooth.
- In another bowl, combine flour, pumpkin pie spice, baking powder, baking soda, and salt. Gradually add to wet mixture, stirring until just combined. Do not overmix.
- In a separate bowl, whisk together cream cheese, granulated sugar, flour, vanilla extract, and egg until smooth and creamy.
- Pour half of the pumpkin batter into the prepared loaf pan. Spread the cream cheese filling over the batter, then top with the remaining pumpkin batter.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Cover loosely with foil if the top browns too quickly.
- Let the bread cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Store in an airtight container at room temperature for 3–4 days or refrigerate for up to a week. This bread also freezes well for up to 3 months—wrap tightly before freezing.
