  • ¼ cup vegetable oil
  • ⅓ cup granulated sugar
  • ⅓ cup light brown sugar
  • 1 cup pure pumpkin puree
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups all-purpose flour
  • 2 teaspoons pumpkin pie spice
  • ¾ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • For the Cream Cheese Filling:
  • 4 oz cream cheese, softened to room temperature
  • ¼ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 large egg, at room temperature


Instructions

  1. Preheat oven to 350°F (180°C). Grease a 9×5 loaf pan and lightly flour it for easy release.
  2. In a large bowl, whisk together oil, granulated sugar, brown sugar, pumpkin puree, egg, and vanilla extract until smooth.
  3. In another bowl, combine flour, pumpkin pie spice, baking powder, baking soda, and salt. Gradually add to wet mixture, stirring until just combined. Do not overmix.
  4. In a separate bowl, whisk together cream cheese, granulated sugar, flour, vanilla extract, and egg until smooth and creamy.
  5. Pour half of the pumpkin batter into the prepared loaf pan. Spread the cream cheese filling over the batter, then top with the remaining pumpkin batter.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Cover loosely with foil if the top browns too quickly.
  7. Let the bread cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Store in an airtight container at room temperature for 3–4 days or refrigerate for up to a week. This bread also freezes well for up to 3 months—wrap tightly before freezing.
