  • ½ Cup unsalted butter, at room temperature
  • 1 Box strawberry cake mix (15¼ ounces)
  • ½ Cup powdered sugar (for rolling)
  • 8 Ounces cream cheese, at room temperature
  • 1 egg, at room temperature
  • 36 strawberry ice cream cone kisses, unwrapped


Instructions

  • Preheat the oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  • In a large bowl, beat together the butter, cream cheese, and egg until creamy and smooth using a hand or stand mixer.
  • Add the strawberry cake mix to the bowl and mix until fully combined and no dry lumps remain.
  • Cover the dough with plastic wrap and chill in the refrigerator for 30 minutes.
  • Using a 1-tablespoon cookie scoop, portion the dough into balls. Roll each ball in your hands to smooth and then coat in powdered sugar.
  • Arrange the cookie dough balls on the prepared baking sheets, leaving at least 1½ inches of space between each one.
  • Bake for 8-10 minutes or until the edges of the cookies are set, and the centers remain soft.
  • Immediately after removing from the oven, press a strawberry ice cream cone kiss into the center of each cookie. Allow cookies to cool completely on the baking sheets before transferring to a wire rack.
  • Store in an airtight container at room temperature for up to 5 days or freeze for longer storage.
