- 1 pound lean ground beef
- 1 (1 oz) packet taco seasoning
- 1/4 cup water or beef broth
- 1 cup refried beans (optional)
- 2 cups cooked Mexican rice
- 4 burrito-sized flour tortillas
- 2 cups Fritos or Doritos
- 1 cup cheese dip, warmed
- 1 cup shredded Mexican cheese blend
- 1/2 cup sour cream
- Salsa, if desired
Instructions
- In a skillet over medium heat, cook ground beef until no longer pink, breaking apart with a spatula. Drain excess grease.
- Add taco seasoning and water (or beef broth), stir, and simmer for 1 minute.
- Stir in refried beans; add a splash of water if needed for a creamy texture.
- Warm cooked Mexican rice and tortillas.
- To assemble: place beef and bean mixture in the center of a tortilla, add rice, chips, cheese dip, shredded cheese, and sour cream.
- Fold in the sides, then roll from the bottom up, tucking in the filling as you go.
- Serve as is for soft burritos or toast in a dry skillet for a crispy outside. Serve with salsa if desired.
Notes
For extra meltiness, wrap burritos in foil and bake at 350°F for 5–7 minutes. Use fresh tortillas to avoid tearing. Store fillings separately for make-ahead convenience.
