  • 1 pound lean ground beef
  • 1 (1 oz) packet taco seasoning
  • 1/4 cup water or beef broth
  • 1 cup refried beans (optional)
  • 2 cups cooked Mexican rice
  • 4 burrito-sized flour tortillas
  • 2 cups Fritos or Doritos
  • 1 cup cheese dip, warmed
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup sour cream
  • Salsa, if desired


Instructions

  1. In a skillet over medium heat, cook ground beef until no longer pink, breaking apart with a spatula. Drain excess grease.
  2. Add taco seasoning and water (or beef broth), stir, and simmer for 1 minute.
  3. Stir in refried beans; add a splash of water if needed for a creamy texture.
  4. Warm cooked Mexican rice and tortillas.
  5. To assemble: place beef and bean mixture in the center of a tortilla, add rice, chips, cheese dip, shredded cheese, and sour cream.
  6. Fold in the sides, then roll from the bottom up, tucking in the filling as you go.
  7. Serve as is for soft burritos or toast in a dry skillet for a crispy outside. Serve with salsa if desired.
