Description

Refreshing and easy Watermelon Feta Skewers with fresh mint and a balsamic glaze drizzle. The perfect 10-minute no-cook summer appetizer.


Ingredients

Scale

1/2 small seedless watermelon, cubed into 1-inch pieces

8 oz block feta cheese, cubed

1 bunch fresh mint leaves

1/4 cup balsamic glaze

1 lime, zested

Optional: Cracked black pepper


Instructions

1. Cube the watermelon and feta into uniform pieces, roughly 1-inch square.

2. Wash and pat dry the mint leaves.

3. Thread a mint leaf onto a 4-inch skewer, followed by a cube of feta, then a cube of watermelon.

4. Place the skewers upright on a serving platter.

5. Just before serving, drizzle with balsamic glaze and sprinkle with lime zest.

6. Finish with a light dusting of cracked black pepper if desired.

Notes

Do not assemble more than 4 hours in advance to prevent the watermelon from making the cheese soggy. Keep refrigerated until serving.
